Cluster beans with Coconut (Goru chikkudu kobbari koora)
Cluster beans are a good source of fiber. They are not only low in calories but also very effective in lowering the blood sugar andcholesterol levels.
When we are kids, we really hate to eat them. But when my neighbouring aunt told this way of cooking cluster beans with coconut, my mom started doing this way. Now I'm also doing. After reading below recipe and doing it once, you will also surely start cooking this vegetable this way :)
Ingredients:
Cluster beans (Goru chikkudu)
Coconut - grated - 1/4 cup (fresh or frozen)
Onion - 1 big
Green chillies - 2
Red chillies - 2
Mustard, Zeera, Urad dal, Curry leaves for seasoning
Oil
Salt
Method:
- Wash and cut cluster beans into 1/2 inch pieces.
- Pressure cook them by sprinkling little water and salt for just one or two whistles. Do not over cook them as they loose their great flavor when you do so.
- Heat the oil in a pan and put the seasoning.
- In the mean while, grind onion with red and green chillies, zeera, salt coarsely
- When the seasoning is ready, add this onion mix and fry until it turns light brown.
- Add this grated coconut and fry for couple of mins. Aroma of this combo of fried onion and coconut is really outstanding!
- Drain the water if any from the cooked cluster beans and add them to the above mixture.
- Then fry for 2 more mins and turn off the stove.
Serve with steaming white rice with ghee... This is really gorgeous and really really easy one !!
