Pulla Atlu
Ingredients:
Green Chillies 5-8
Cumin Seeds 1 tsp
Urad Dal 1 cup
Rice 2 1/2- 3 cups
Salt to taste
Oil as required
Method of preparation:
Using mortar and pestle, grind green chillies, half of cumin seeds and salt together into rough paste.
Soak rice and urad dal separately in water for 4-6 hrs.
Grind rice and urad dal into smooth paste adding least amount of water required.
Mix both rice and urad dal pastes to form dosa batter.
Alternatively, add 2 cups of rice flour to urad dal paste.
Leave the dosa batter to ferment for a day or until it gets the sour taste.
To the above sour and fermented batter, add green chilli cumin paste and other half of cumin seeds.
Mix thoroughly and add water if required to obtain the consistency which is not too thick or thin.
Heat a griddle on high flame, spread a tsp of oil to cover the whole griddle.
When griddle gets smoking hot, pour a ladle full of dosa batter on it and spread with the bottom of ladle in spiral motion to form a thin dosa.
When the bottom side of dosa gets golden brown and lifts up a little, turn on other side for few more seconds.
Serve hot with any chutney.
Notes: This dosa is generally made with leftovers of plain or masala dosa batter.
